Salmon Pesto

There is nothing genius about this so-called recipe. It’s fish. And it’s pesto. I must say though, the combination is Earth shattering–which is why I felt compelled to share it with you…

Rather than loading up on pasta and feeling guilty about it later–indulge in a small drizzle of this basil packed goodness over your favorite fish. If you’ve never made your own pesto. It is really really easy, and only requires a food processor. Follow my pesto recipe here.

Sprinkle salmon with salt and pepper, a squeeze of lemon, and bake at 400 degrees for about 12-15 minutes. Plate, drizzle and enjoy with grilled veggies or salad. Definitely simple enough to enjoy on a weeknight.
